Primarily for Jacksonville, that means Gag Grouper for sport and eating and Goliath Grouper for sport only, as they are restricted worldwide and not harvested. Gag Grouper is one of the tastiest of the Florida Groupers, along with Black, Red, and Scamp, all of which can be found in the deep waters but are not as common as the Gag. Sea Bass, specifically Black Sea Bass, is another tasty fish in the waters off Jacksonville. The meat is tender and flakes off in small chunks. It has a mild flavor, and you can prepare it in many different ways.
